In conventional drum roasting the outer hull of the bean, called the chaff, pops off and settles to the bottom of the drum where it burns into the batch of beans, often creating a bitter taste. In air roasting, the hot air forces out the chaff and collects it separately, so all that's being roasted are the beans themselves. At Lucky Shot Coffee, we float the beans on a fluid bed of hot air, roasting them evenly on all sides and producing a cleaner, smoother, less bitter tasting coffee.
